But in Williamsburg, Brooklyn, one restaurant is making waves with a style of pizza not from the five boroughs, but the Midwest. True to its name, Emmy Squared specializes in the thick, rectangular pies found in Detroit, Michigan, crisping its focaccia-like crust and fresh mozzarella cheese in small, squarish pans. The brainchild of Matt and Emily Hyland—the power couple behind the popular Neapolitan pie joint, Pizza Loves Emily—Emmy Squared is out to broaden the definition of pizza in NYC.
